Piyaz, a staple in Turkish cuisine, is a simple yet vibrant salad made with white beans, onions, parsley, tomatoes, and the zingy sumac spice. This quick-to-make dish is not only delicious but also packed with nutritional benefits. The white beans offer a hearty dose of plant-based protein and fiber, perfect for supporting digestion and maintaining stable blood sugar levels. Extra virgin olive oil, rich in heart-healthy monounsaturated fats, enhances the flavors, while sumac adds a tangy kick and a touch of red vibrance. Fresh parsley rounds it out with a burst of vitamins C and K.

Ingredients

  • 1 can of white beans (preferably Borlotti or Cannellini)
  • 1 medium red onion
  • 125 grams cherry or plum tomatoes
  • Juice of 1 lemon
  • 2-3 tablespoons red wine vinegar
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons sumac
  • ½ bunch fresh parsley, finely chopped
  • Salt and pepper to taste

Instructions

Drain and rinse the white beans under cold water, then let them dry.

Slice the red onion thinly and marinate it in a bowl with lemon juice and red wine vinegar for about 10 minutes.

Quarter the tomatoes. Use a tomato corer to remove the watery part of the tomato and the seeds. Mix them with the marinated onions.

Add the white beans, parsley, sumac, and a drizzle of olive oil. Toss to coat evenly. Adjust salt and pepper to taste.

Chill in the fridge for at least 30 minutes to melt the flavors.

Notes

Sumac is usually found in Turkish and Middle Eastern shops. You can also order it online from Amazon.

Don’t have sumac? The salad is still a hit without it!

Prefer a less juicy salad? Drain some of the onion marinade before adding the other ingredients.
